Homemade Ramen

Homemade ramen is easier than you think! This ramen recipe is veggie-packed, made with black tea marinated eggs, and the broth is INCREDIBLE. 

Seriously Best Ramen!

First, prepare the ramen eggs. These soft-boiled eggs are flavored with black tea, soy sauce, ginger, lemongrass, and fish sauce.

1. Ramen Eggs

Next, prepare the quick-pickled mushrooms. Marinate beech mushrooms in rice vinegar, apple cider vinegar, red pepper flakes, and salt.

2. Pickled Mushrooms

Heat olive oil in a large pot and sauté fresh garlic and grated ginger. Then, add bok choy and let them steam for  4-5 minutes.

3. Bok Choy

Sauté matchstick carrots and red pepper in olive oil for 2-3 minutes. Then, transfer the broth from the eggs into the pot. Add chicken broth, soy sauce, and sriracha.

4. More Veggies!

Add cooked ramen noodles and cooked bok choy to the pot. Then, heat over medium/high heat until your ramen is hot. Serve with pickled mushrooms and soft boiled eggs.
