Mushroom Risotto

Make your favorite risotto dish quickly and easily with this Instant Pot recipe!

what you need:

olive oil white onion, minced garlic, peeled and minced salt & ground pepper chardonnay shiitake mushrooms, diced crimini mushrooms, diced uncooked arborio rice vegetable broth or mushroom broth shredded Italian cheese

Sauté

First, use the sauté feature on your Instant Pot, adding the olive oil, onion and mushroom once hot and sautéing until the onion is translucent.

Deglaze

Next, deglaze the pan with the wine. Then, add the arborio rice and cook for 2-3 minutes. Lastly, add the broth.

Cook

Cover the Instant Pot and turn on high pressure for 5 minutes. Quick release the pressure and uncover the pot. Stir the risotto once and add the cheese.

Serve

Uncover the pot. The risotto should be creamy, but not liquidy. Top with freshly grated cheese and pepper. Enjoy!
