This is a deliciously creamy vegan curry made completely in the Instant Pot. We pair with rice or quinoa for a balanced meal!

what you need:

Onion & garlic Ginger Nutmeg Pumpkin Russet potato Carrots Cherry tomatoes Coconut milk Broth, any kind Curry paste Spinach  Peas

Onions & Garlic

Place the Instant Pot on the sauté function and sauté the onion, garlic and fresh ginger.

Veggies

Then, add the pumpkin, potato, carrots, cherry tomatoes & serrano pepper into the pot with the broth, salt, coconut milk & curry paste.

Cook

Cook on high pressure for 6 minutes. Once complete, add in spinach and peas. Stir until peas are cooked and spinach is wilted.

Serve

Serve with rice or quinoa for a balanced meal. We topped with a squeeze of lime and cilantro. Enjoy!
