This Mexican casserole is made with taco-seasoned ground beef, rice, and tons of veggies!

what you need:

We love the Mexican flavors this casserole has to offer. It's made with smokey spices and green chiles.

Make Beef

Brown your ground beef in a nonstick skillet and then transfer into a casserole dish. Add minced garlic, peppers, onion, and minute rice.


Prep Casserole

Add beef broth, tomato sauce, green chiles, pinto beans, corn, and taco seasoning. Then, mix to combine everything together.



Cover your casserole dish with a piece of tin foil and bake at 375ºF for 45 minutes. Uncover, add shredded cheese and bake for  5-10 more minutes.
