Smoked  Ham

what you need:

kosher salt raw boneless ham brown sugar garlic powder ground black pepper paprika chili powder salted butter white onion garlic honey

Brine

Prepare brine and then pour into a 20-30 gal. container. Fill with additional cold water. Add ham, cover & refrigerate for 12 hours. Prepare dry rub and set aside.

Massage

Remove ham from brine & pat dry. Massage dry rub over ham. Let rest for 15 minutes. Preheat the smoker to 300ºF. & prepare basting liquid according to recipe.

Smoke

Pour broth into the saucepan and bring to a boil. Turn heat to low and cover. Transfer the ham to the smoker and smoke for 2-3 hours, basting every 30 minutes.

Serve

Check the internal temp at 2 hours. If the internal temp is around 140ºF. Remove the ham and let it rest for 15 minutes. Slice and serve!
