PB&J  Delights


Why you'll love it:

Made with toasted quinoa and pack great flavor and crunch into every bite.

what you need:

uncooked white quinoa all-natural peanut butter melted coconut oil  honey chopped peanuts raspberry or grape jam coarse salt

Heat Pan

Spray silicone muffin pan with coconut oil. Set aside. Heat a skillet & add 1 tbsp. of coconut oil. When melted, add the quinoa. Turn the heat to medium and cover the pan.


Cook Quinoa

Stir the quinoa with a spatula. Let cook for about 10 minutes, stirring periodically until golden brown. Remove from heat and add it to a large mixing bowl.



Add peanut butter, coconut oil, honey, & peanuts to the quinoa. Mix until combined. Add mixture into each muffin cup. Shake pan to even the peanut butter mixture out.



Add jam to the top of each quinoa cup. Use a toothpick to swirl the jam on top of the cup. Sprinkle with sea salt & place in the freezer for 1 hour. Remove & enjoy!
