Zucchini Cookies

These oatmeal zucchini cookies are perfectly sweet and so chewy!

what you need:

Rolled oats Zucchini Butter Brown sugar Maple syrup Cashew butter Egg Vanilla

Grate Zucchini


First, use a cheese grater to grate the zucchini. We like to use a larger grate, but any size will work.

Remove Moisture


Place a tea towel over a large bowl. Then, add the grated zucchini and season with salt. Let sit for 10 minutes and then squeeze out the moisture.

Mix Wet

Whisk together melted butter and brown sugar. Then, add the rest of the wet ingredients and mix again.


Mix Dry

Add the dry ingredients and mix to combine. Then refrigerate the  cookie dough for 20 minutes to set.



Scoop 2 tablespoons of dough and roll into a ball. Press between palms. Bake at 350ºF for 11-13 minutes.
