Pumpkin Cheesecake Bars

what you need:

Pumpkin Gingersnap cookie crumbs Butter Coconut oil Cream cheese Pumpkin pie spice Maple syrup Coconut sugar White whole wheat flour Eggs, whole

Cookie Crust

First, make your cookie crumbs by pulsing the cookies in a food processor. Then, add crumbs, butter and coconut oil to a bowl and combine.


Press Crust

Press cookie crust into a greased 8x8 in. pan. Then, bake for 10 minutes.



Next, mix rest of ingredients (minus eggs) into a bowl and mix with an electric mixer. Then, mix eggs on low speed and finally pour over crust.


Bake & Serve

Bake the bars for about 38-40 minutes. Once cooked through, let cool in the refrigerator for ~2 hours. Then, serve!
