Spatchcock Chicken

Spatchcock chicken is the same thing as butterfly chicken. This means the backbone of the chicken has been removed so that bird can be open and flattened for cooking.

What is a spatchcock chicken?

Cut along both sides of your chicken to remove the spine. Then, flip it over so it's breast-side up.

STEP 1: BUTTERFLY CHICKEN

Season the entire chicken with garlic powder, chili powder, cumin, brown sugar, salt, and pepper.

STEP 2: SEASON

Cover baking sheet with tin foil and then place onion, garlic, thyme, broth and white wine on the pan. Cover with a wire rack.

STEP 3: BAKING SHEET

Place spatchcock chicken on top of wire rack and bake at 435ºF for 35-45 minutes or until chicken reaches 160ºF.

STEP 4: BAKE

Let spatchcock chicken rest for 5-10 minutes so that the internal temperature reaches 165ºF.

STEP 5: LET REST

Enjoy!

Serve with gravy from the bottom of the pan!
