SLOW COOKER
Easy hands-off meal that includes mashed potatoes!
STEP 1
Combine pork dry rub and then generously season pork loin roast on all sides.
STEP 2
Sear pork loin roast for 2-3 minutes in olive oil on all 4 sides. This will give it a delicious crust.
STEP 3
Transfer garlic, onion, potatoes, and pork into your slow cooker. Top with gravy ingredients.
STEP 4
Cover and cook on low for 7-8 hours or until pork reaches an internal temp of 145ºF.
STEP 5
Make mashed potatoes with cooked potatoes and thicken gravy for serving.
