Turkey Brine

what you need:

water kosher salt white onion garlic  peppercorns whole cloves fresh thyme fresh rosemary turkey

Fill

Fill a 20-30 quart pot with 2 gallons of water. Remove 2 cups of water from the pot and add it to a saucepan with the kosher salt.

Heat

Heat water & salt over medium heat & whisk until the salt has dissolved. Do not bring to a boil. Add the salted water back into the pot.

Add

Next, add the onion, garlic, peppercorns, cloves, thyme, and rosemary to the pot and stir.

Refrigerate

Add turkey to the pot. Make sure it is completely submerged in the water. Place pot in the refrigerator for 12 hours or overnight.
