Spinach Stuffed Chicken Breast

garlic powder coarse salt pepper chicken breast olive oil white onion fresh spinach cream cheese
Preheat oven to 375ºF. Add garlic powder, salt, and pepper to a small bowl. Mix & set aside. Slice chicken lengthwise , creating a flap. Season with spice rub.
Cook spinach with onion & transfer to a large bowl & cool for 10 minutes. Add cream cheese & stir until combined. Divide the spinach mixture into fourths.
Stuff each chicken breast with spinach mixture. Secure with toothpicks to hold chicken together. Sear chicken in heated skillet until browned on each side.
Place the skillet into the oven and bake at 375ºF for 20-30 minutes, flipping halfway. Make sure internal temp is 165ºF. Let rest for at least 10 minutes before eating.
