This strawberry tart is the perfect summer dessert! It's filled with a lemony vanilla bean custard.

what you need:
salted pistachios graham cracker sheets light brown sugar melted butter heavy whipping cream honey lemon zest vanilla bean 2% plain Greek yogurt fresh strawberries fresh mint lemon zest
Filling
First, pour the heavy cream, honey and lemon zest and vanilla bean. Slowly add the Greek yogurt to the bowl and whisk until combined.

Crust
To make the crust, place the pistachios, graham crackers, light brown sugar and melted butter.

Bake
Press the crust crumbs into a greased tart pan. Then, bake the crust at 350ºF for 10-13 minutes.

Chill
After the crust is cooled, pour the filling into the crust. Then, chill the tart in the refrigerator until the filling sets (~1 hour).

Serve
Once the custard has set, create a strawberry “rose” or “dahlia” with the thin strawberry slices. Top with mint leaves and enjoy!
