Sweet Potato Spinach Lasagna

what you need:

whole milk ricotta low-fat cottage cheese canned sweet potato puree fresh rosemary, chopped spinch tomato sauce

Cheese Mixture

First, make your sweet potato and cheese mixture by combining the ricotta, cottage cheese, sweet potato puree, and rosemary.

Sauce

Sauté onion and spinach. Once sautéed, add in the tomato or marinara sauce. Then, add the sauce to the bottom of a casserole dish.

Layer

Add the noodles on top of the sauce, then the cheese mixture, and lastly the tomato sauce again. Then, repeat until you have 3 or more layers.

Prep Sugar

Then, bake the lasagna at 375ºF for 25 minutes Then, sprinkle on mozzarella cheese and bake for an additional 5-10 minutes. Lastly, serve!
