Whisk

First preheat oven to 375ºF. Next, whisk together eggs and milk in a large bowl. Mince garlic, quarter zucchini, & dicing bell peppers and onions.

Saute

Heat olive oil in a nonstick skillet. Add veggies. Season with salt and pepper. Saute veggies for around 5 minutes or until they are partially cooked.

Spray

Then, spray the sides of your pan with nonstick cooking spray. Add egg mixture to the veggies, making sure everything is submerged in egg.

Serve

Place pan into oven and bake at 375ºF for 16-18 minutes or until fully cooked in the middle. Remove from oven and top with goat cheese.
