Turkey  Casserole

what you need:

butternut squash carrot  yellow onion olive oil salt & ground pepper long-grain white rice unsalted butter all-purpose flour chicken or turkey broth parmesan cheese  shredded cooked turkey

Bake

Preheat oven to 375ºF. Place the butternut squash, carrot, and yellow onion onto a baking sheet. Drizzle with olive oil. Season with salt & pepper & bake for 17 minutes.

Prepare

Prepare rice and let cool.  Make a roux and then remove from heat. Add Worcestershire sauce, garlic powder, salt, and parmesan cheese. Whisk to combine.

Combine

Prepare a casserole dish. Combine the veggies, rice, frozen peas and corn, cooked turkey, and the cheese sauce in the casserole dish and mix to combine.

Serve

Sprinkle the top of the casserole with the remaining shredded parmesan cheese. Bake at 375ºF for 20 minutes or until everything is warm through.
