Thai Curry Skillet


what you need:

Carrot Snow peas Garbanzo beans Quick cooking rice Full-fat coconut milk Thai red curry paste Garlic

This vegetarian curry skillet is made with one pot and in just 30 minutes!

Cook Veggies

Cook garlic, onion, and carrot in melted coconut oil over medium/high heat.


Add Ingredients

Add in the rest of the ingredients - bell pepper, snow peas, garbanzo beans, rice, coconut milk, broth, red curry paste, and vinegar.


Mix & Simmer

Mix everything together with a wooden spoon. Bring to a boil over high heat. Cover and turn down to low. Let simmer for 15 to 20 minutes.


Season with Lime

Once the rice has fully absorbed the liquid and it's no longer hard, season with a squeeze of lime juice and mix to combine.



Serve your One-Pot Vegetarian Thai Curry with fresh lime juice and chopped green onion. Enjoy!
