seedless watermelon
English cucumbers
red onion
red wine vinegar
lemon juice

feta crumbles

Prepare
Add the watermelon, cucumbers, & red onion together. In a separate bowl combine dressing ingredients. Drizzle & toss.

Season
Add the basil, mint, and feta crumbles to the salad and season with the remaining salt and freshly ground pepper. Set aside.

Toast

Toast the pine nuts over medium heat for 3-4 minutes until golden brown, being sure to toss them while they toast.
Serve
Sprinkle the pine nuts over the salad and serve immediately.
