man cookbook was waiting for me when I got home from class yesterday! Dr. Josh Axe promotes eating real, natural foods from a diet rich in raw fruits, veggies, and lean meats.
There are some pretty crazy recipes in here, one being Black Bean Brownies. Beans + Brownies…yah that’s what I said.
I guess there’s only one way for me to find out….
Anyways…speaking of good news. Today was the first day of my internship! I am so excited and honored to be part of such an amazing program! I intern for a national nonprofit called Cooking Matters
(which operates under Share Our Strength). Cooking Matters educates people all over the nation how to prepare healthy meals on a very limited budget. This is an outreach hands on program that provides a specialized curricula in nutrition, food preparation, and budget shopping. Check out their website to learn more about Cooking Matters

Speaking of MORE good news…well, for me at least. I made some killer carob chip banana fro yo tonight. Fluffy, whipped banana fro yo infused with sweet carob chips. Such a perfect way to celebrate!
Carob Chip Banana Fro Yo
-1 frozen banana
-1/2T peanut flour
-2T nonfat vanilla yogurt
-splash of van almond milk
-handful of carob chips
–Directions: In a small food processor, combine all ingredients (except for carob chips) and mix for 1-2 minutes. I had to stop it a few times to scrape the sides. After your mixture becomes nice and fluffy, toss in your carob chips and pulse 3-4 times. Viola!
