Air Fryer Elote

Let's make elote in the air fryer! The corn on the cob is seasoned and cooked to perfection, then rolled in a creamy spread full of cheesy and zesty Mexican flavors. Yum!

Ingredients

Corn

Elote Sauce

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayo
  • 2 oz. cotija cheese crumbled
  • 1 tablespoon fresh lime juice
  • 1 tablespoon lime zest
  • ¼ teaspoon cayenne pepper

Instructions

  • Preheat the air fryer to 350ºF. Drizzle the 4 ears of corn with 1 tablespoon of olive oil. Massage the oil into the corn with your hands. Season the corn with ½ teaspoon of salt and ½ teaspoon of pepper.

  • Add 1 tablespoon of olive oil to the bottom of the air fryer and then transfer the corn to the air fryer. Cook the corn for 10 minutes, flipping halfway.

  • While the corn is cooking, add all of the ingredients (except for the cayenne pepper) for the elote sauce to a bowl and mix to combine. Pour the sauce on a large plate. Spread the sauce out evenly.

  • Remove the corn from the air fryer and roll each ear of corn in the elote sauce. Use a spoon to drizzle more elote sauce over the corn. Then season the corn with the cayenne pepper. Enjoy!

Tips & Notes

  • Every air fryer is different, so the cook time may vary slightly.
  • If cayenne pepper is too spicy, replace it with ground paprika.
