Chocolate Peppermint Chia Seed Pudding

- ¼ cup cocoa powder
- 1/2 cup chia seeds
- ¼ cup + 2 tablespoons maple syrup
- 2 cups coconut milk unsweetened
- 1/8 teaspoon peppermint extract
- pinch of sea salt
Place all ingredients in a large Tupperware and whisk until smooth.
Then, transfer the chia seed pudding into the refrigerator for at least 4 hours or overnight.
Stir the chia seed pudding after it has thickened and add more liquid as needed. Or, serve immediately with crushed peppermint and chocolate chips.
