A simple, at-home version of Chicken Pad Thai!

This homemade Chicken Pad Thai recipe is packed with extra veggies, scrambled eggs, rice noodles, and the most delicious pad Thai saice!

STEP 1: NOODLES

Boil a large pot of water. Then, remove it from the heat and add rice noodles. Let sit in hot water for 8-10 minutes.

STEP 2: MAKE SAUCE

Prepare sauce by mixing together soy sauce, maple syrup, rice vinegar, garlic, fish sauce, lime juice, and red pepper flakes.

STEP 3: COOK CHICKEN & VEGGIES

Cook sliced chicken, carrots, red pepper, and green onion in olive oil. 

STEP 4: SCRAMBLE EGG

Make a well with the veggies and then pour in the egg. Cook until scrambled. Then, add chicken, noodles, and sauce back into the pan.

STEP 5: TOSS & SERVE

Toss all ingredients together until well combined. Then, serve with sliced green onion, crushed peanuts, and a squeeze of lime juice.
