Strawberry Pico de Gallo

- 1 cup finely diced tomatoes
- 1/8 teaspoon salt
- 1.5 cup diced strawberries
- ½ cup sweet corn canned or froen
- ¼ cup finely diced onion
- ¼ cup chopped fresh cilantro
- 1 tablespoon minced jalapeño, seeds removed fresh or canned
- ½ medium lime juiced
- salt to taste
Place tomatoes into a medium size bowl and sprinkle with 1/8 teaspoon of salt. Let sit for 20 minutes to draw water out of the tomatoes.
Strain the liquid from the tomatoes and add them to a large mixing bowl with the rest of the ingredients.
Mix to combine and enjoy with chips or as a topping!
