Strawberry Pico de Gallo

Strawberry pico de gallo packs the perfect punch of sweet and savory and is so delicious on a taco or as a dip with chips!

Ingredients

  • 1 cup finely diced tomatoes
  • 1/8 teaspoon salt
  • 1.5 cup diced strawberries
  • ½ cup sweet corn canned or froen
  • ¼ cup finely diced onion
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon minced jalapeño, seeds removed fresh or canned
  • ½ medium lime juiced
  • salt to taste

Instructions

  • Place tomatoes into a medium size bowl and sprinkle with 1/8 teaspoon of salt. Let sit for 20 minutes to draw water out of the tomatoes.
  • Strain the liquid from the tomatoes and add them to a large mixing bowl with the rest of the ingredients.
  • Mix to combine and enjoy with chips or as a topping!
