Naan Breakfast Pizzas

These naan pizzas are the perfect savory breakfast for any morning. You can make these breakfast pizzas a few different ways, but both ways are packed with healthy and delicious ingredients.

Ingredients

Pesto Naan Pizzas

  • 2 large naan breads
  • 1 tablespoon olive oil
  • 2 large eggs
  • 4 tablespoons pesto separated
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup julienned sun-dried tomatoes we used the kind in olive oil
  • 1/4 medium red onion diced
  • 1 cup fresh arugula
  • 1 teaspoon red pepper flakes
  • 4 leaves fresh basil roughly chopped
  • salt and pepper to taste

Sausage Breakfast Naan Pizza

  • 2 large naan breads
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1/4 cup fresh cherry tomatoes chopped and smashed
  • 1 cup shredded cheddar cheese
  • 1/4 red medium onion diced
  • 2 large chicken breakfast sausage links sliced
  • 2 tablespoons Greek yogurt
  • 1 tablespoon hot sauce
  • 2 tablespoons fresh chopped parsley
  • salt and pepper to taste

Instructions

Pesto Naan Pizza

  • Preheat the oven to 400ºF and place the plain naan bread into the oven (right onto the rack) and bake for 10 minutes until the naan begins to turn golden brown. Set the naan aside for later.
  • Next, heat a medium skillet over medium/high heat. Add olive oil.
  • When the olive oil is fragrant, crack two eggs into the pan and cook until they are almost over easy (they will continue to cook in the oven). Remove eggs from the pan.
  • It's time to assemble the pesto naan breakfast pizza. Spread 2 tablespoons of pesto onto each pizza.
  • Then, sprinkle 1/4 cup mozzarella cheese, 2 tablespoons sun-dried tomatoes, and 2 tablespoons onion over each pizza.
  • Finally, place one fried egg onto each naan pizza and place both pizzas onto a baking sheet.
  • Bake pizzas for an additional 5 minutes at 400ºF or until the cheese melts.
  • Remove from the oven and top each pizza with arugula, red pepper flakes, and fresh basil.
  • Salt and pepper to taste and enjoy!

Sausage Breakfast Naan Pizza

  • Preheat the oven to 400ºF and place the plain naan into the oven (right onto the rack) and bake for 10 minutes until the naan begins to turn golden brown. Set the naan aside for later.
  • Next, heat a medium pan over medium/high heat. Add olive oil.
  • Crack eggs into a small bowl and whisk them together.
  • When the olive oil is fragrant, pour the whisked eggs into the hot pan and then use a spatula to move the eggs around the pan for about a minute. Cook the eggs for about a minute, leaving them still a little wet (they will cook longer in the oven).
  • Remove eggs from the heat.
  • Assemble the naan pizzas by first spooning 2 tablespoons of smashed fresh tomatoes onto each naan.
  • Then, add 1/2 cup of cheddar cheese, 2 tablespoons of diced onion, and 1 sliced chicken sausage to each naan.
  • Finally, add the scrambled egg mixture to each naan pizza and place them on a baking sheet. Bake pizzas at 400ºF for 5 minutes or until the cheese melts.
  • While the pizzas are baking, add the greek yogurt and hot sauce to a small bowl and mix until combined.
  • Remove the pizzas from the oven and top each pizza with 1.5 tablespoons of the hot sauce mixture
  • Sprinkle the parsley over the pizza and season with salt and pepper, to taste. Enjoy!
