Apple Burrata Salad
This easy apple burrata salad is the perfect mixture of sweet crunchy apples, greens, and a simple dressing. Make it for an easy side any time of year.

- 2 honey crisp apples thinly sliced (we used a mandolin)
- 1 teaspoon honey
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- 2 tablespoons fresh lemon juice
- 5 oz. arugula
- ½ red onion thinly sliced (we used a mandolin)
- 10 oz. yellow cherry tomatoes halved (or multi-colored)
- ¼ cup golden raisins
- ⅓ cup pistachios chopped
- 1 tablespoon white wine vinegar
- 1 tablespoon olive oil +more for topping
- ½ teaspoon salt
- ½ teaspoon freshly cracked pepper
- 2 8 oz. burrata balls
Add the sliced apples to a mixing bowl and drizzle the honey over the apples and then toss. Season the apples with chili powder, salt, and lemon juice and toss again. Let the apples marinate for 10 minutes while preparing the salad.
Place the arugula in the bottom of a shallow salad bowl. Sprinkle the onion, cherry tomatoes, golden raisins, and pistachios over the arugula.
After the apples have sat for 10 minutes, add them to the salad bowl. Drizzle the excess liquid from the apple bowl over the salad and toss all of the ingredients together.
Drizzle the white wine vinegar, olive oil, and salt and pepper over the salad and toss again.
Lastly, rip open the burrata and place it on top of the salad. Drizzle with olive oil and serve.
- We use arugula, but you can also use a spring mix if you’d like.
- Wait to dress the salad until right before serving.
