Make this apple burrata salad with your favorite variation of fresh sliced apples. Toss arugula, golden raisins, cherry tomatoes, red onions, and chopped pistachios with a simple dressing and then finish off the the whole salad with burrata cheese.

This apple burrata salad has been my go-to salad recipe. I even recently just made it with peaches and it was fantastic.

I love that it’s made with fresh, garden veggies and features apples and burrata cheese, two of my favorite foods. It makes for the perfect segue salad going from summer to fall.

The golden raisins and pistachios are the cherry on top in addition to the super simple wine white vinaigrette dressing!

What is in this apple burrata salad?

Apples: we are big fans of honey crisp apples in general, but they are especially delicious in this salad. They are crisp, juicy, and fruity. If you have a favorite apple go ahead and use it!

Burrata: you add the burrata salad to the top of this delicious salad. Burrata cheese comes in a few different sizes, 8-oz. large balls and 4-oz. small balls. We use 2 8-oz. balls but you can also use 4 4-oz. balls.

Golden raisins: golden raisins are bits of sweet delight. We love the sweet and tangy bite that they offer that is just a bit different than regular raisins.

Pistachios: salty and meaty pistachios make everything better.

Red onion: the only onion we recommend for this salad is a thinly sliced red onion. It is the right amount of sweetness, flavor, and crunch.

Arugula: this is a green salad and we use arugula as our greens. If you are not an arugula fan, you can use your favorite greens, too. A spring mix would be delightful.

Ingredients Swaps and Variations

This salad is extremely customizable. Swap the apple for any in season fruit such as peaches (my personal fav), pears, or cherries.

If you can’t find burrata cheese, you can try fresh mozzarella.

Really any green works in this salad. Try mixed greens, romaine, or baby kale.

Add a protein to make it a complete meal. It would be delicious with grilled chicken, cast iron steak, or air fryer pork tenderloin.

Top Tips

Don’t skip the apples resting. Part of the dressing is letting the apples rest so that some liquid is extracted from the apples. That excess liquid adds delicious juices adds to the dressing!

Don’t toss this salad until right before serving. All of the ingredients for this salad plus the arugula will make for a soggy salad if it is left out for too long. Be sure to toss this salad right before serving and not a moment sooner.

Get creative. Many of the ingredients for this salad can be substituted. If you don’t have pistachios, use walnuts or toasted pine nuts. If you aren’t a fan of arugula, use a spring mix.

Burrata is an Italian cheese made from mozzarella and cream. The outer part of the cheese is a solid mozzarella texture, while the inside is creamy and soft. This combination makes it perfect for this warm burrata and roasted tomatoes recipe.

Storage

We do not recommend storing this salad dressed. If you are preparing this salad for another day, we would recommend preparing all of the ingredients separate and tossing the salad right before serving.

Serving Suggestions

You can serve this salad as a main meal or a side. My family recently had this with grilled steak and baked potatoes and it was phenomenal. For dessert, try an in-season fruit crisp such as cherry crisp or triple berry crisp.

Ingredients 

  • 2 honey crisp apples, thinly sliced (we used a mandolin)
  • 1 teaspoon honey
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 5 oz. arugula
  • ½ red onion, thinly sliced (we used a mandolin)
  • 10 oz. yellow cherry tomatoes, halved (or multi-colored)
  • ¼ cup golden raisins
  • cup pistachios, chopped
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil, +more for topping
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked pepper
  • 2 8 oz. burrata balls

Instructions 

  • Add the sliced apples to a mixing bowl and drizzle the honey over the apples and then toss. Season the apples with chili powder, salt, and lemon juice and toss again. Let the apples marinate for 10 minutes while preparing the salad.

  • Place the arugula in the bottom of a shallow salad bowl. Sprinkle the onion, cherry tomatoes, golden raisins, and pistachios over the arugula.

  • After the apples have sat for 10 minutes, add them to the salad bowl. Drizzle the excess liquid from the apple bowl over the salad and toss all of the ingredients together.
  • Drizzle the white wine vinegar, olive oil, and salt and pepper over the salad and toss again.
  • Lastly, rip open the burrata and place it on top of the salad. Drizzle with olive oil and serve.

  • We use arugula, but you can also use a spring mix if you’d like.
  • Wait to dress the salad until right before serving.

OMG this is so good. I went off recipe a bit by using spring mix rather than arugula, regular raisins rather than golden and didnโ€™t use white wine vinegar but holy cow, I would recommend this to everyone n
