This baked bursting tomato Boursin pasta has the easiest sauce ever! Toss everything in the oven and let it do its magic. The result is a rich, creamy sauce that coats every bite of pasta with flavor.

Ingredients

  • ¼ cup olive oil
  • 2 tablespoons tomato paste
  • ½ medium white onion diced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 10 oz. cherry tomatoes
  • 1 head garlic ~10 cloves garlic
  • 2 pucks Boursin cheese any flavor
  • 8 oz. fusilli pasta

Instructions

  • Preheat the oven to 400ºF.
  • Add the olive oil and tomato paste into an 8x8-inch baking dish and whisk the ingredients together. Trim the tip of the head of garlic so the cloves remain intact. Add the onion, salt, pepper, tomatoes, and garlic to the dish and toss all of the ingredients together until coated.
  • Nestle two Boursin pucks into the tomatoes and cover. Bake for 25-30 minutes or until the cheese browns and the tomatoes have burst.

  • While the dip is in the oven, prepare the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 5-7 minutes. Before straining the pasta, set aside 1 cup of starchy pasta water. Strain pasta and set aside.*
  • Remove the dip and carefully squeeze the garlic cloves out of the head. Use a fork to mash the garlic cloves and tomatoes. Then, stir everything together.

  • Toss the pasta with the Boursin dip and add 1 tablespoon of pasta water to the dish at a time until it reaches a deliciously creamy consistency.

  • Drizzle the top with a little olive oil and season with fresh chives and red pepper flakes.

Notes

  • We used garlic and chive Boursin cheese, but any flavor will work. You can replace the Boursin bricks with goat cheese logs if necessary.
  • You may not use all of the pasta water, use enough so the pasta sauce becomes thick and creamy.
