Ingredients

Toppings (4 quadrants)

  • 1/4 cup chocolate chips
  • 1/2 medium banana sliced
  • 1 tablespoon peanut butter
  • 1 tablespoon salted peanuts
  • 1/3 cup mixed berries

Instructions

  • First, preheat oven to 350ºF then spray an 8x8-inch baking dish with nonstick cooking spray.
  • Place the bananas on the bottom of the dish and use a fork to mash them. Then, add in the rest of the wet ingredients and mix to combine.
  • Add the dry ingredients and mix again.
  • Wipe the sides of your casserole dish to clean things up and then add your favorite toppings. We're giving measurements for what we used in the 4 quadrants, but you can use whatever your heart desires.
  • Bake at 350ºF for 25-30 minutes or until fully cooked in the middle. Remove from oven and let cool.*

  • Turn this recipe into baked oatmeal cups by using a muffin tin. Fill each muffin around 3/4 of the way full and bake at 350ºF for about 18-20 minutes.
