These cottage cheese baked eggs are easy to make, customizable, and absolutely perfect for meal prep! They're full of cheesy flavor and make a protein-packed breakfast option for those hectic mornings.

Ingredients

  • 12 large eggs
  • 1 cup 2% cottage cheese
  • ½ teaspoon sea salt
  • ¼ teaspoon cracked black pepper

  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions

  • Preheat the oven to 350ºF and spray a silicone mold or metal muffin tin with non-stick cooking spray.
  • Whisk eggs in a large bowl; be sure to vigorously whisk the eggs so they are completely combined. Add the cottage cheese, salt, and pepper to the bowl.
