Frozen Peanut Butter Protein Smores

These sheet pan protein smores are a healthier twist on the classic campfire treat. Made with protein-packed ingredients like Greek yogurt and almond butter, they're perfect for satisfying your sweet tooth without breaking your health goals.

  • 9 sheets of graham crackers

Instructions

  • Line the bottom of an 8x8-inch pan (preferably with square edges instead of rounded edges) with sheets of graham crackers.

  • Next, add the Greek yogurt, vanilla protein powder, honey, and peanut butter and mix until thick and combined.
  • Pour the Greek yogurt mixture into the pan and evenly spread the mixture over the top of the graham crackers, almost to the edges.

  • Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave for 20-second increments, stirring after every increment, until the chocolate has melted and becomes glossy.
  • Pour the chocolate over the Greek yogurt mixture and evenly spread the chocolate almost to the edges. Top with the remaining graham crackers.

  • Cover and transfer the pan to the freezer and freeze for at least two hours. The longer the pan is in the freezer, the firmer the s’mores will be.

  • Remove from the freezer and let it sit at room temperature for about 5 minutes before cutting into individual protein smores.

Notes

  • The protein powder you use will dictate the flavor of your protein s’more. We used Vital Proteins vanilla protein and 365 vanilla protein, and they tasted great. We do not recommend using Truvani vanilla protein in the recipe.
  • Remember, every protein powder is different. Some protein powders absorb more moisture than others. If your protein layer tastes gritty or dry, add more Greek yogurt or honey.
  • The longer the protein smores are left in the freezer, the firmer they will become. If they are left in the freezer overnight, just let them sit at room temperature until they are easy to take a bite from.
  • You may have to break the graham crackers to make them fit perfectly into the pan you are using.
