Ground Beef Cottage Cheese Queso Recipe

This ground beef cottage cheese queso dip recipe is cheesy, creamy and protein-packed thanks to the ground beef and blended cottage cheese! All you need is 5 ingredients, and your favorite tortilla chips.

Ingredients

  • 1 lb. 93/7 ground beef
  • 1 pack of Siete taco seasoning 1.31 oz or ~2 tablespoons homemade seasoning
  • 12 oz. chunky salsa
  • 16 oz. 2% cottage cheese*
  • ½ cup Mexican-style shredded cheese + more for topping

Optional Toppings

  • Fresh cilantro
  • Fresh avocado
  • Fresh green onion

Instructions

  • Heat a large oven-safe skillet over medium heat. Add the ground beef and cook for 2-3 minutes. Add the taco seasoning and stir.
  • Continue to cook the meat until it is fully cooked. Remove the skillet from the heat and add the salsa. Stir to combine and set aside.
  • Prepare the blended cottage cheese. Add the cottage cheese and shredded cheese to a high speed blender or food processor. Process until completely smooth. If the mixture isn’t blending, add 1-2 teaspoons of water to the blender to loosen the mixture.
  • Add the blended mixture to the skillet and stir all of the ingredients together. Top with more shredded cheese.
  • Transfer the skillet to the oven and broil until the cheese on the top becomes melted and brown.
  • Remove from the oven and top with fresh cilantro, avocado, and green onion.
  • Serve immediately with tortilla chips.

Notes

Be sure you are using a thick cottage cheese before you blend. If your cottage cheese has a higher liquid content before you blend it, you could end up with a very water queso. We suggest using Good Culture or Kemps.
