This ground beef cottage cheese queso dip recipe is cheesy, creamy and protein-packed thanks to the ground beef and blended cottage cheese! All you need is 5 ingredients, and your favorite tortilla chips.
1pack of Siete taco seasoning1.31 oz or ~2 tablespoons homemade seasoning
12oz.chunky salsa
16oz.2% cottage cheese*
½cupMexican-style shredded cheese+ more for topping
Optional Toppings
Fresh cilantro
Fresh avocado
Fresh green onion
Instructions
Heat a large oven-safe skillet over medium heat. Add the ground beef and cook for 2-3 minutes. Add the taco seasoning and stir.
Continue to cook the meat until it is fully cooked. Remove the skillet from the heat and add the salsa. Stir to combine and set aside.
Prepare the blended cottage cheese. Add the cottage cheese and shredded cheese to a high speed blender or food processor. Process until completely smooth. If the mixture isn’t blending, add 1-2 teaspoons of water to the blender to loosen the mixture.
Add the blended mixture to the skillet and stir all of the ingredients together. Top with more shredded cheese.
Transfer the skillet to the oven and broil until the cheese on the top becomes melted and brown.
Remove from the oven and top with fresh cilantro, avocado, and green onion.
Serve immediately with tortilla chips.
Notes
Be sure you are using a thick cottage cheese before you blend. If your cottage cheese has a higher liquid content before you blend it, you could end up with a very water queso. We suggest using Good Culture or Kemps.
