Prepare the corn relish. Add the white onion, vinegar, salt, and sugar to a bowl and toss to coat. Add the corn, mayonnaise, lemon juice, and dill. Toss to combine. Set aside.
Mix all of the ingredients for the sauce into a bowl and mix to combine. Set aside.
Heat a cast iron pan over high heat or heat a flat top to at least 450ºF.
Add the ground beef and salt to a large bowl. Gently mix the ingredients and separate them into 2 oz. balls, it’s easiest to measure these with a food scale. Set aside.
Place two patties in the pan and use a stiff metal spatula to press each burger to about ¼-inch thick. Cook for 30 seconds and flip the burger. Immediately add a slice of cheese to each patty. Cook for 30 seconds and immediately remove from the pan.
Repeat step #4 until all of the burger patties have been cooked.
Assemble the burgers. Place one burger patty onto the bottom and top with three slices of pickles. Finally, add the second burger patty, add 1-2 tablespoons of burger sauce, and 2-3 tablespoons of corn relish. Add the top bun and enjoy.*
