Hodgepodge is a midwest mobile kitchen that’s brought to you in collaboration with our friends at Forgotten Star — it’s parked right outside the brewery in Fridley. Our menu is a Midwest-inspired, food-for-all kind of menu. This shines through the variety of menu items, unique midwestern ingredients, and approachable price-point, including this delicious sweet corn smash burger!

This burger has been far and away our best seller on the truck so far, and you’ll be able to enjoy it in all her glory if you live here in the Twin Cities. Of course, you can always make it in your own kitchen at home using this recipe!

Ingredients for Sweet Corn Smash Burgers

Burger sauce

Our go-to burger sauce requires only 10 ingredients! You might even have all these common ingredients in your fridge and pantry already. Our burger sauce tastes perfectly tangy and creamy, which makes it an amazing pairing for burgers like this sweet corn smashie.

Sweet corn relish

If you’ve visited Hodgepodge already, you know that this sweet corn relish is SO SO GOOD. People have been adding it as a side to dip potato chips in, they’ve been topping their brat with it, and of course, they’ve been enjoying it on this sweet corn smash burger. It’s made with simple ingredients, and is incredibly flavorful.

Smash patties

We’re using 1/4 lb. smash patties, but stacking two on each burg! Top them each with a slice of American cheese (the best burger cheese for melty goodness IMO).

A gooooood bun

Don’t let a dry, bready bun ruin the perfect burger! We recommend a brioche or burger bun that’s squishy yet won’t fall apart when it meets the juicy burger, sauce and relish.

These sweet corn smash burgers come slathered in our amazing homemade burger sauce. It’s the perfect companion to any burger.

Top Tips for the Perfect Sweet Corn Smashie

  • Don’t overlook the quality of your beef: For optimal flavor, we recommend using high-quality ground beef. 
  • Don’t oil the pan before smashing: We don’t add any moisture or oil to the pan before searing to get the crispy edges of the smash burger. 
  • Don’t crowd the pan with patties: We cook 2 patties at a time to avoid crowding the pan.  Feel free to smash more at once if your pan accommodates it.
  • Extra sweet corn relish = perfect leftovers: There will be extra corn relish. Save for a side salad, add more to the burgers or use as a dipper for chips.

Storage

Store leftover smash patties in the refrigerator for 3-5 days in an airtight container. Always store separately from the burger buns, burger sauce and sweet corn relish.

Ingredients 

Sweet Corn Relish

  • ½ white onion, sliced
  • 1.5 teaspoons white wine vinegar
  • ½ teaspoon granulated sugar
  • ½ teaspoon sea salt
  • 10 oz. corn kernels
  • 3 tablespoons mayonnaise
  • 2 teaspoons fresh lemon juice
  • ¼ cup chopped fresh dill

Special Sauce

  • ¼ cup mayonnaise
  • ¼ cup full-fat Greek yogurt
  • ½ cup ketchup
  • ¼ yellow onion, finely minced
  • 4 small dill pickles, grated
  • 3 teaspoons pickle juice
  • 1 teaspoon granulated sugar

Other Ingredients

  • 1 lb. ground beef
  • 2 teaspoons salt
  • 8 slices American cheese
  • 12 pickle rounds
  • 4 burger buns

Instructions 

  • Prepare the corn relish. Add the white onion, vinegar, salt, and sugar to a bowl and toss to coat. Add the corn, mayonnaise, lemon juice, and dill. Toss to combine. Set aside.
  • Mix all of the ingredients for the sauce into a bowl and mix to combine. Set aside.

  • Heat a cast iron pan over high heat or heat a flat top to at least 450ºF.
  • Add the ground beef and salt to a large bowl. Gently mix the ingredients and separate them into 2 oz. balls, it’s easiest to measure these with a food scale. Set aside.
  • Place two patties in the pan and use a stiff metal spatula to press each burger to about ¼-inch thick. Cook for 30 seconds and flip the burger. Immediately add a slice of cheese to each patty. Cook for 30 seconds and immediately remove from the pan.

  • Repeat step #4 until all of the burger patties have been cooked.

  • Assemble the burgers. Place one burger patty onto the bottom and top with three slices of pickles. Finally, add the second burger patty, add 1-2 tablespoons of burger sauce, and 2-3 tablespoons of corn relish. Add the top bun and enjoy.*
