I just ADORE bite-sized treats like this. No knife required, no mess, just pure, handheld happiness. There’s something so satisfying about popping one (or five) of these golden nuggets into my mouth while still in my pajamas at home with my toddlers. And let’s be real, anything that makes breakfast feel like a party without the cleanup is a total win in my book. 😆

These French toast bites are just as easy to make as my classic French toast with arguably less cleanup—just dunk bread cubes in cinnamon-vanilla custard. The air fryer does all the work, giving you crisp edges and a custardy center without needing to watch a skillet! Plus, they freeze super well, so you can just pop them in the microwave on crazy-busy mornings.

Essential Ingredients

  • Sourdough bread: My MVP! It’s sturdy enough to soak up all that custardy goodness without turning to mush.
  • Eggs: The golden glue that creates that dreamy, rich custard coating.
  • Milk: Any kind works! Dairy, almond, oat… you do you.
  • Ground cinnamon: The cozy spice that makes every bite taste like a hug.
  • Vanilla extract: A splash of magic that makes everything taste like dessert.
  • Maple syrup: Sweet, sticky perfection for drizzling (or drowning—no judgment).
  • Powdered sugar (optional): The snowy finishing touch that makes these bites chef’s kiss.

Depending on your air fryer, you might need to cook these French toast bites in a couple of batches.

The DL? You want to make sure there is enough space for the air to fully circulate around each bite, giving them a crispy exterior. If you overcrowd the air fryer, the bites may not cook evenly and can get a little soggy.

My Easy Cooking Method

  1. Prep Egg Mixture. Whisk eggs, milk, cinnamon, vanilla, maple syrup, and sea salt in a large bowl. 
  2. Coat the Bread. Next, add the bread to the bowl and mix until all of the bread is coated in the egg mixture. Let the bread sit in the mixture for at least 5 minutes, stirring periodically. 
  3. Add Coconut Oil. Add the melted coconut oil to the mixture and mix again. 
  4. Air Fry. Transfer half of the French toast bites to the air fryer and cook for 8 minutes at 350°F. Loosen the bottom of the bites and cook for an additional 2 minutes, or until they turn golden brown. Cook all the bites. 
  5. Toss in Butter. Add all the bites to a large bowl and toss them with butter until the butter has melted and all the bites are evenly coated. 
  6. Serve & Enjoy. Serve alongside maple syrup and top with powdered sugar. Enjoy!

What can I use as a substitute for coconut oil?

You can swap out coconut oil for another oil, but keep in mind that whatever you choose will affect the flavor of the bites. For the best results, go with a neutral oil.

Storage

Store your French toast bites in an airtight container in the fridge for up to 3 days. To reheat, just toss them in the air fryer for a few minutes until they’re warmed up.

To freeze: these are GREAT to keep in the freezer (speaking from experience with 2 hungry toddlers at home 😋). Allow the French toast bites to cool fully, and then place on a baking sheet or large plate in the freezer until frozen completely (this prevents them from sticking together before freezing). Then, transfer to an airtight container or freezer Ziploc and freeze for up to 3 months.

Ingredients 

  • 8 slices sourdough bread, sliced into 1.5-inch squares
  • 5 large eggs
  • ½ cup milk, any kind
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • ½ teaspoon sea salt
  • 1.5 tablespoons melted coconut oil*
  • 3 tablespoons salted butter, cut into chunks

Tips & Notes

  • The coconut oil is what helps make the French toast bites a golden brown color. Another oil can be used instead of coconut oil. Just keep in mind that the flavor of the oil will flavor the bites. A neutral oil is best. We chose coconut oil because we liked the flavor.
