I LOVE OATMEAL BAKES. I would scream it from a mountain top if we had mountains in Minnesota! There are many reasons that we love baked oatmeal on Team Fit Foodie. We have baked oatmeal in muffin form or in cake form- it doesn’t matter what it’s baked in. We just can’t get enough!

Baked Oatmeal is…

Nutrient Rich. Baked oatmeal can be an amazing option for breakfast, lunch, or a snack. The only thing you have to be careful about is to make sure to use whole and healthy ingredients. Make sure to use natural sweeteners like honey and maple syrup and include fresh fruit or vegetable puree to add extra vitamins and minerals to your baked oatmeal. Meal Prep Rockstar. One thing we love to develop on FFF are healthy and easy recipes that are great for meal prep. We know that we all lead busy lives and we try to do what we can to help everyone make life a little easier. Baked oatmeal is the perfect meal prep recipe. All you have to do is prep a delicious baked oatmeal recipe at the beginning of the week. Let it cool and cut it into pieces for the week. Make sure to store your baked oatmeal in an airtight container in the refrigerator. It’s that easy! The best part of baked oatmeal is that you can make it your own. We generally used mashed banana as a sweetener and a base in our oatmeal, but feel free to use applesauce. Banana Berry Baked Oatmeal

This banana oatmeal bake with berries is a go-to recipe in our kitchen. Hopefully, at least one kind of berry is one sale at the grocery store and we usually have fresh bananas of frozen bananas in the freezer (check out how to freeze bananas here). Other than our favorite fruit mix-ins, we always have rolled oats and almond milk on hand. Breakfast doesn’t get much easier than that! It is so fun to already have all the ingredients for a recipe you want to make in your pantry. We have a couple of tips and tricks that we use when we make this baked banana oatmeal as well as other baked oatmeal recipes. Check them out!

Tips + Tricks

It’s all about the oats. Nine times out of ten, our baked oatmeal recipes are made with rolled oats. We have found that quick cooking oats get a bit mushy and steel cut oats are a bit too crunchy. We’re not giving up on other oats, but for now, we love the chewy consistency classic rolled oats the most! Add enough liquid. The last thing anyone needs is a dried out oatmeal bake. Every kitchen, bowl, and oven are different. Make sure that your baked oatmeal batter is the consistency of muffin batter. If it doesn’t pour easily into a pan, add a tablespoon of almond milk at a time until it is easily pourable. Don’t overbake. No overbaking allowed! Make sure to pull the baked oatmeal out of the oven immediately. Baked oatmeal continues to bake in the pan after you take it out, so just be cautious. Storage. Like I said earlier, baked oatmeal makes a great meal prep meal. The #1 tip I have for you is to let the baked oatmeal cool before storing it in a stasher bag, ziploc, or storage container. If you are going to eat it within 5 days, storing it in the refrigerator is perfect. However, if you make a couple of batches of baked oatmeal, you can store it in the freezer (after letting it cool completely) for up to three months. Just be sure to wrap your baked oatmeal in plastic wrap and then place into an airtight storage container. That’s all I have for you! Ingredients

Instructions 

  • First, preheat oven to 350ºF then spray an 8×8-inch baking dish with nonstick cooking spray.
  • Place 1 large ripe banana in a large bowl. Then, use a fork to mash it until pureed.
  • Add the rest of the ingredients into the large bowl and mix until combined.
  • Transfer batter into baking dish and bake at 350ºF for about 30 minutes or until the top begins to brown.
  • Remove from oven and let cool.*

Tips & Notes

*Storage: Let the baked oatmeal cool completely before storing it in a stasher bag, ziploc, or storage container. If you are going to eat it within 5 days, storing it in the refrigerator is perfect. I used frozen peaches and used the air fryer! 350 for 15 minutes perfection!! Hard to stop eating.

I made a zero added sugar sugar version of this by substituting 1 tbsp each of almond butter and milk for the maple syrup. The texture turned out just fine. However, I might retry this with maybe another banana or a sweeter fruit.

It’s just one more way to eat oats! ๐Ÿ™‚
