This bananas foster French toast is a delicious combination of the iconic New Orleans dessert and a decadent breakfast dish. It’s a perfect treat for special occasions or a lazy weekend brunch!
We are obsessed with our bananas foster muffins. The caramelized bananas are heaven on earth. They seemed like the perfect addition to French toast!

What’s In Bananas Foster French Toast
Banana’s foster French toast might sound fancy, but it’s actually made with basic ingredients that you’ll likely already have in your kitchen.
We used sourdough for the bread, as it’s sturdy enough to hold the rich sauce without falling apart. This then gets dipped in a mixture of eggs, milk, mashed ripe bananas, cinnamon, and salt for a flavorful and custardy French toast.
You’ll also need sliced bananas (these can be fresher), salted butter, light brown sugar, and brandy to make the incredible bananas foster sauce. It’s buttery, sweet, and has a hint of brandy for a touch of sophistication… because you FANCY.

Variations and Substitutions
Sourdough bread: Brioche bread, challah bread, Texas toast, or any stale bread would be great substitutes for this decadent French toast recipe. However, regular bread would work too!
Milk: Any milk would work in this recipe, whether it’s dairy or plant-based. Just make sure to use unsweetened and unflavored milk.
Eggs: For a vegan version, you can use flax eggs instead of regular eggs. Mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes to thicken.
Tasty Additions: If you want to add some extra flavor and texture, try adding a teaspoon of vanilla extract or ground nutmeg to the custard mixture. You can also sprinkle chopped pecans or walnuts on top for some crunch.

Bananas Foster French Toast
Ingredients
- 3 large eggs
- ¼ cup milk, of any kind
- 2 tablespoons mashed ripe banana
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- ⅛ teaspoon salt
- 4-8 slices sourdough bread, depending on how large the bread slices are — ours were pretty big
- 4 tablespoons salted butter, separated
- 4 tablespoons light brown sugar
- 1 tablespoon brandy
- 2 large bananas, sliced
Instructions
- Whisk the eggs in a large bowl and then add the milk, mashed banana, cinnamon, and salt to the eggs and whisk until combined. Pour the egg mixture into a baking dish or bowl.
- Dip each piece of bread into the egg mixture, flipping the bread over and allowing the egg mixture to soak into the bread.
- Heat 1 tablespoon of butter in a large skillet over medium heat. When the butter is melted, add the French toast to the pan and cook for 3-6 minutes on each side until golden brown. Remove from the pan.
- Melt the remaining butter in the same skillet over medium/high heat. When the butter is melted, add the brown sugar and brandy to the pan and whisk the ingredients together.
- Heat the mixture until combined and place the bananas in the pan with the sauce. Saute the bananas for 2-3 minutes on each side or until each side has caramelized. Remove the pan from the heat.
- Serve the French toast with a pad of butter, bananas foster (along with any sauce left in the pan), and whipped cream or yogurt.

- Feel free to replace the sourdough bread with a different type of bread.

Boxing Day breakfast! What a wonderful idea. I didnโt have brandy/rum so added a teaspoon of maple flavoring but I donโt think that added much. The sauteed bananas are superb.
Next time I will add some more butter/bananas to have some extra sauce. It doesnโt need anything else. (Oh – I used very dark brown sugar lumps which I had leftover from cookie baking – they dissolve nicely in melted butter.)
