These Coconut Key Lime Pie Popsicles are so good, you’ll want to keep a stash in the freezer for the whole summer! Creamy coconut, zesty lime, sweet white chocolate, and crunchy vanilla wafers give you all the flavors you love about this popular pie, but as a refreshing frozen treat.
Once I made our Watermelon Wine Freeze Pops and Meal-Prep Smoothie Popsicles, I realized just how EASY it was to make your own. And such a fun summer activity to involve the kiddos with 🥰🥰
With this coconut key lime popsicle recipe, there’s no more buying expensive, sugary popsicles from the store! You can make your own with all-natural ingredients, some popsicle molds, a good mix here and there, and a simple assembly.
Then, just pop them (no pun intended 😂) into the freezer and put your patient hat on. The only hard part is waiting for them to freeze.
Coconut Key Lime Pie Popsicles – What You Need
- Cans coconut cream: The base for these key lime popsicles, coconut cream is essential for that creamy, tropical taste.
- Agave: The PERFECT natural sweetener for this recipe. It has a mild honey flavor and is less likely to crystallize in the freezer than sugar.
- Lime: We used lime juice and lime zest to give these popsicles that amazing key lime flavor!
- White chocolate chips: White chocolate tastes fantastic with the lime flavor of these coconut lime popsicles! It also makes them more sweet and indulgent.
- Coconut oil: Coconut oil helps the white chocolate stay melty and gives these popsicles a nice, smooth texture.
- Nilla wafers: We crumble these up to mimic a pie crust in the popsicle!
- Popsicle molds: You’ll need some type of popsicle mold for these tasty treats.
Don’t have popsicle molds?
Don’t let not having popsicle molds stop you from making these delicious coconut key lime pie popsicles. You can use small paper cups or even an ice cube tray to make mini popsicles! Just cover the top with foil and stick a popsicle stick in the middle before freezing.

Swap the white chocolate with dark chocolate or even coconut shavings for a different flavor and texture.

Smoothie popsicles are one of our finest meal prep hacks. Simply pour any leftover smoothie into a plastic popsicle mold and freeze for later!
Tips for Easy Popsicle Making
Freeze popsicles for at least 8 hours. This will ensure they are solid enough to easily remove from the mold.
Run warm water over the mold before removing. This helps to loosen the popsicles and make them easier to remove without breaking.
Make sure the popsicle sticks are securely placed in the mold before freezing. If they move around, it could make it difficult to remove the popsicles from the mold.
How to Store Coconut Key Lime Pie Popsicles
If you have leftover popsicles, store them in an airtight container or plastic bag in the freezer. They should last for up to 2 weeks.
Coconut Key Lime Pie Popsicles Recipe
Ingredients
- 2 15 oz. cans coconut cream
- 2 tablespoons agave
- ¼ cup lime juice
- 1 tablespoon lime zest
- ¼ cup white chocolate chips, divided
- 1 teaspoon coconut oil
- 6 nilla wafers, crumbled
Instructions
- Place the coconut cream, agave, lime juice, lime zest, and 2 tablespoons of white chocolate chips into a bowl and whisk to combine.
- Transfer the mixture to a spouted measuring cup.
- Pour the coconut cream mixture into the popsicle molds. Make sure to leave ¼ inch at the top for the topper.
- Place the popsicle molds into the freezer and allow to freeze for 1 hour.
- When the popsicles have been in the freezer for an hour, prepare the white chocolate layer. Place the remaining white chocolate and coconut oil into a microwave-safe bowl and heat for 15-second intervals until the chocolate has melted.
- Add the crumbled nilla wafers to the melted white chocolate and scoop 1 teaspoon and add to each popsicle.
- Place the sticks into the molds quickly after topping with white chocolate. The white chocolate will harden quickly after touching the chilled popsicle.
- Freeze for 8 hours or overnight.

Is coconut cream different than coconut milk in a can?
Hi Holly, Coconut cream also comes in a can, and is thicker than coconut milk. You’ll find it in the same grocery store aisle — hope this helps!
