This protein cookie dough bark features a layer of our reader favorite oatmeal peanut butter cookie dough topped with our homemade magic shell chocolate and sprinkled with a generous helping of monster trail mix. Enjoy a whopping 14g of protein per chunk!

Keep it in the freezer and break off a piece of bark whenever you want a protein-forward sweet treat.

We’ve got protein truffles, protein brownies and even protein fudgesicles, but this is our very first protein cookie dough bark! It’s such a fun break-apart treat that you can store in a big ol’ bag in the freezer.

What’s the DL? We ❤️ this bark for a few reasons:

  • Minimal prep: you only need one bowl for the cookie dough (no food processor needed!), and another for the magic shell. Then roll out the bark, and top with magic shell and trail mix and pop in the freezer.
  • 14g of protein per chunk — need we say more?
  • Easily customizable: this recipe was born when we had a little bit of monster trail mix left, and wanted to do something fun with it! Got extra sprinkles? Fun! Have Halloween candy to use up? Any bite-sized candy or chopped up candy bars would be so cute on the top of this bark.

Bark thickness doesn’t have to be exact: We tested this recipe with a thin cookie dough layer (1/4 inch thick), but you could go as thick as 1/2 inch thick. But just know the amount of chocolate you pour on top will depend on how thin you roll the dough (ie: you might use LESS magic shell if your cookie dough layer isn’t as thin.

Peanut butter comes in all shapes and sizes: You may need more water depending on how drippy your peanut butter is. We’ve tested this with JIF peanut butter (requires more water), and all-natural drippy peanut butter (requires less water). Both work well.

The sky’s the limit with toppings: we loveeee all things monster cookies, so monster trail mix was an easy choice in our kitchen. Any variety of trail mix, small candies or even sprinkles would be fun!

This cookie dough bark is best stored in an airtight container in the freezer for up to 3 months. We like to break ours apart into chunks, and then store in a ziploc bag in the freezer, so you can easily grab a chunk or two at at time.

You can also keep this bark in the fridge for up to a week, but it may not hold its shape as well. Enjoy them as a grab-n-go snack when you’re craving something sweet and need a boost of energy!

Ingredients 

Protein Peanut Butter Layer

Magic Shell

Topping

  • ½ cup Monster Cookie trail mix , or similar toppings

Instructions 

  • Prepare the cookie dough bottom. Add the peanut butter, protein powder, oats, maple syrup and water to a bowl and mix with a spoon. You may need to use your hands to work the moisture into the dough. The dough should hold together when you pick up and mold it into a ball. If the mixture isn’t holding together, add more water.
  • Mold the mixture into a large ball. Transfer the dough to a piece of large parchment paper. Flatten the dough down with your hands and place another piece of parchment paper on top of the dough.
  • Use a rolling pin to roll the dough out to about ¼ inch. Place the parchment paper and dough on a hard flat surface (we use a cutting board) and transfer it to the freezer.
  • Prepare your magic shell. Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave on high for 20 second increments, stirring after each increment, until the chocolate is smooth and glossy.
  • Remove the dough from the freezer and pour the magic shell over the top of the dough. Spread it out evenly with a spatula.
  • Top the chocolate with the monster cookie dough trail mix and return it to the freezer. Freeze for at least 15 minutes or until the chocolate is completely hardened.
  • Remove it from the freezer and break the bark into pieces. Enjoy immediately or store in the freezer-safe container.

Tips & Notes

  • You may need more water depending on how drippy the peanut butter is.
  • The amount of chocolate you pour on top will depend on how thin you roll the dough.
  • Any trail mix or toppings can be used as the topping for this bark.
  • Nutrition information only includes peanut butter and chocolate layer.
