Air Fryer Pumpkin Bagel Bites

All you need is Skyr-style yogurt, self rising flour and an air fryer to make these high-protein, chewy pumpkin bagel bites. You’re seriously going to love how yummy and easy this recipe is — make ’em for a snack or top ’em with our pumpkin glaze for a sweet treat.

It’s truly wild that all you really need to make higher protein bagels is flour and yogurt. We started with our air fryer protein bagel recipe (omg they’re SO, SO good with everything bagel seasoning), and couldn’t stop there — so we’re back with these oh so yummy pumpkin bagel bites. Similar ingredients and rolled into balls for the perfect bite-sized treat. Plus, it’s officially fall in Minneapolis, so cue all the pumpkin flavors 🤩

What You Need for Pumpkin Bagel Bites

  • Self-rising flour: we chose a self-rising flour because then you don’t to add a leavener.
  • Plain Skyr yogurt or Greek yogurt: we tested this with both Skyr yogurt and Greek yogurt and they both work great. Skyr is higher in protein and our favorite brand is Painterland Sisters.
  • Pumpkin puree: these are pumpkin bagel bites after all! You’ll add this right into the same bowl as the flour, yogurt and pumpkin pie spice for an extra hit of flavor.
  • Pumpkin pie spice: a teaspoon goes a long way in the flavor department for these bagel bites!
  • Egg: this is for an egg wash before air frying. It’ll help make the tops crispy and golden brown.

don’t have self rising flour?

Use all purpose flour and baking powder. You’ll need 1.5 teaspoons baking powder per 1 cup of flour.

Easy Pumpkin Glaze Ingredients

Pro tip: don’t skip the glaze! These bagel bites are obviously delish on their own, but adding a lil sweetness just makes them even more fun and delish. All you’ll need is:

  • Powdered sugar
  • Milk (any kind will work!)
  • Pumpkin pie spice

In addition to the above ingredients, you’ll also need an air fryer, parchment paper, and a brush for the egg wash.

What can I use instead of Skyr-style yogurt?

Feel free to use classic Greek yogurt. We always recommend using a higher-fat yogurt like 2% or 5% for a better texture.

Can I use gluten-free flour instead?

We don’t recommend it, unfortunately! We’ve tested this recipe with Bob’s Red Mill 1:1 GF flour, and it did not yield the same texture.

Storage

While these pumpkin bagel bites are best enjoyed immediately, we recommend storing any leftovers in the fridge. Just make sure to let them cool completely before transferring into an airtight container and refrigerating.

We also recommend waiting to glaze leftover bagel bites until you’re ready to serve them.

How to reheat: air fry at 400ºF for 1-2 minutes.

Instructions 

  • Preheat the air fryer to 350℉.
  • Place the flour, yogurt, pumpkin puree, and pumpkin pie spice into a bowl and mix to combine using your hands. A smooth ball should form. If the dough is too sticky add more flour, 1 tablespoon at a time.
  • Cut the dough into 12 pieces, about 1-1.5 tablespoons each. Roll into a ball. Brush each ball with some of the whisked egg.
  • Line the air fryer basket with parchment paper and place the bagel bites into the basket. Make sure they are not touching.
  • Air fry at 350℉ for 8-10 minutes.
  • While the bagel bites are cooking make the glaze. Place all of the ingredients for the glaze in a bowl and whisk to combine. Set aside.
  • Remove the bagel bites from the air fryer and drizzle the glaze on top.

Tips & Notes

  • Flour: if you do not have self-rising flour, you can use all-purpose flour + 1.5 teaspoons baking powder.
  • This recipe makes 12 bagel bites and the serving size is 3.
  • We used Skyr yogurt (Painterland Sisters is our favorite!) because it’s naturally super high in protein. However, we are confident that any full-fat Greek yogurt will work, too.
  • When deciding to add more flour in step 2, we rinsed our hands and lightly kneaded. If it was still too sticky we added more flour.
  • We have tried making these with gluten-free flour; it does not yield the same texture.
  • All air fryers are slightly different. The cook time will vary based on the size of the bagel bites and the air fryer. Check at 8 minutes before deciding if they need more time.
