Cool off this summer with this Vegan Blueberry Muffin Banana Nice Cream. It is naturally sweetened, delicious, and made with only six ingredients!

Life is better when ice cream is involved. Period.
I wouldn’t be telling the truth if I said that ice cream was something I ate on special occasions because I eat ice cream at least twice a week (everything in moderation, right?). Whether that means I walk to my favorite local fro-yo shop or make it myself, there is just something about a cold treat that you can’t beat. Especially during Minnesota summers. HOLY HOT.
We’ve been working with our favorite nut milk company Silk, to bring you lots of tasty treats this summer. We made these delicious Healthy Vegan Cowboy Cookies a few weeks ago for a tasty grab-n-go snack and now we have this scrumptious and refreshing Vegan Blueberry Soft Serve. I took a minute before I wrote this post to reflect on all the different ways I use SILK Almond Milk throughout my day. You guys, it’s a lot. For breakfast, I use SILK in my overnight oats. It’s always what I use when I’m craving a mid-afternoon cereal break. I use it in curries, baked goods, popsicles, and everything in between! I love that SILK overs a low calorie, vitamin rich, milk that is easy to find everywhere I shop. It’s one of my staples. This Vegan Blueberry Muffin Soft Serve is one of my favorite SILK recipes to date.
I have been making banana soft-serve since the beginning of Fit Foodie time and it just never gets old. We have tons of different variations on on FFF: peanut butter cup, cookie dough, and raspberry banana. There’s probably a few more that I missed from the stone ages of blogging, too! What I love about banana soft serve is that it’s a guilt-free dessert. You don’t even have to think twice about eating it because it’s derived from frozen bananas and other add ins. Everyone that I’ve serve banana soft-serve to has loved it, unless for some bizarre reason they don’t like bananas “gasp.” This variation specifically
Six ingredients to make this soft serve and guess what? It’s raw, vegan, gluten-free, and the most perfect dessert you will eat all summer.
- Frozen banans
- Silk Almond Milk (any kind of Silk will work!)
- Vanilla
- Blueberries
- Oats
- Cinnamon
Throw it all in a food processor and blend that baby up!




Vegan Blueberry Muffin Banana Nice Cream
Ingredients
- 4 bananas frozen, sliced
- 1 teaspoon vanilla extract
- 2 tablespoons Silk Unsweetened Almondmilk
- 1/2 teaspoon ground cinnamon
- 1/4 cup toasted rolled oats or your favorite granola
- 3/4 cup fresh blueberries chopped
Instructions
- Place frozen bananas, vanilla extract, almond milk, and ground cinnamon in a high-speed food processor and blend until smooth. You may have to scrape the sides of the food processor a couple times.
- Add the rest of the ingredients to the food processor and pulse for about 15 seconds.*
- Pour the soft serve into a bread pan and freeze for at least four hours or over night.
- Remove from freezer and enjoy. Alternatively you may skip the freezer part and eat right away.

Just made this, omg so yum!! Don’t know if I can wait for it to get much firmer in the freezer!! I made a half recipe, which yielded a good amount – only had two frozen bananas. I needed much more milk, maybe 1/4Cup + to help the blender, did not alter consistency. Nga mihi for the great flavour combo 😊

I totally thought you were meant to put the oats in the soft serve and blena , but just saw that its for on top. i was like woah, what!? I used to eat like a million servings of soft serve at bball camp when I was little. Couldn’t stop!
