Life is better when ice cream is involved. Period.
I wouldn’t be telling the truth if I said that ice cream was something I ate on special occasions because I eat ice cream at least twice a week (everything in moderation, right?). Whether that means I walk to my favorite local fro-yo shop or make it myself, there is just something about a cold treat that you can’t beat. Especially during Minnesota summers. HOLY HOT.
We’ve been working with our favorite nut milk company Silk, to bring you lots of tasty treats this summer. We made these delicious Healthy Vegan Cowboy Cookies a few weeks ago for a tasty grab-n-go snack and now we have this scrumptious and refreshing Vegan Blueberry Soft Serve. I took a minute before I wrote this post to reflect on all the different ways I use SILK Almond Milk throughout my day. You guys, it’s a lot. For breakfast I use SILK in my overnight oats. It’s always what I use when I’m craving a mid-afternoon cereal break. I use it in curries, baked goods, popsicles, and everything in between! I love that SILK overs a low calorie, vitamin rich, milk that is easy to find everywhere I shop. It’s one of my staples. This Vegan Blueberry Muffin Soft Serve is one of my favorite SILK recipes to date.
