It’s time to turn up your smoothie game with this Mint Chip Shake! It’s refreshing and packed with greens and chocolate so it covers all your bases.
Did you guys know that in college (before I grew some balls and started the blog), Linley and I had our own catering and event planning business? It makes perfect sense right? We catered everything from home cooking, to birthday parties, to graduation parties. We had no idea what we were doing at first, but we had fun navigating the catering world. That lasted for about 3 months before we realized catering isn’t as fun as it looks :D. On the bright side- it’s where our love for creating new recipes and serving people really began to blossom.
One of our favorite events was a birthday party for a 5 year old. I named the blog post Inexpensive Details. It was ages ago, as I’m sure you can tell by my mad photography skills, but we did everything from plan the theme of the party, to design an adult and a kids menu, to putting together party favors. Ohhhhhh the good old days.
Since I can remember, Lin and I have been the designated cooks for every occasion. We love being in charge of all things food when it comes to cooking for holidays, summer BBQs, and everything in between. It’s just our jam. Speaking of hosting….I am excited that Team Fit Foodie is co-hosting our second annual Vision and Goals breakfast with Lululemon Twin Cities next weekend at the St. Paul location.
We’re brunching it up and making some of our signature recipes (chocolate chia seed pudding, healthy banana chocoalte chip muffins, and BALLS) for 50+ people. I’ll also be sharing the story of how I started FFF and what my business is like today. Our first annual event with Lulu was last year and it’s really interesting to take a look at what goals I set in 2015. My main one? To grow a team. Operation success! HI LIN AND EM!

Okay, this shake though.
If you love mint + chocolate then you will love this thang! You can’t even taste the spinach AND it’s perfect for St. Patty’s Day or any time for that matter. We topped ours with some coconut whipped cream. All you need is full-fat coconut milk and a little maple syrup and you’re on your way to perfection.
Healthy Mint Chip Shake
- Prep Time: 5 mins
- Total Time: 5 mins
- 4 frozen bananas, medium
- 1 and 1/2 cup almond milk, unsweetened
- a giant handful of spinach
- 1/4 – 1/2 teaspoon peppermint extract**
- 1/4 cup dark chocolate chips
- Place frozen bananas, almond milk, spinach, and peppermint extract in a high-speed blender. Blend on high until smooth. You may need to add a splash more of almond milk depending on how big and how frozen your bananas are. Finally add in dark chocolate chips and pulse a few times to slightly crush chocolate chips.
Peppermint Extract: Start with 1/4 teaspoon and add more to your taste! Some people like it really minty, while others don’t!
