This honey pear galette is both elegant and very easy to make. We use a simple store-bought pie crust, thinly sliced pear, and a simple brown sugar and pecan sprinkle to create a galette with a crispy crust and soft filling.

Gorgeous Honey Pear Galette

Have you ever looked at a beautiful galette and thought to yourself that you could never make that yourself? You’re wrong! Galettes are actually quite easy to make.

Once you have decided on a filling (you can make a sweet galette or a savory galette), all you have to do is roll out a pie dough, layer the filling in a beautiful design, and bake. Scroll down for all of the nitty-gritty details.

All the Ingredients You Need

  • Pie crust: this recipe is made in under an hour because we use a store bought pie crust (we used this Pillsbury pie crust). If you have a favorite homemade pie crust recipe, go ahead and use it.
  • Raw pecans: we use pecans in this recipe because we love how they pair with all of the other ingredients.
  • All-purpose flour: a little flour is helpful to soak up juices that seep out from the pears.
  • Spices (cardamom, cinnamon, nutmeg): we use a mixture of warm spices that compliment pears.
  • Honey: this honey pear galette wouldn’t be the same without honey! You brush the pie crust with honey butter and then drizzle honey over the galette. It’s absolutely delicious.
  • Yellow pears: make sure you buy yellow pears that aren’t completely ripe, it’s nice to use a firmer pear rather than a mushy pear.
  • Fresh lemon juice: don’t skip the lemon juice. It is key to make sure your pears don’t brown before you bake.
  • Butter: to get a brown and flavorful pie crust, we brush the pie crust with butter.

Like we said above, it is very easy to make ingredient swaps in a galette recipe. Below are a few easy swaps you can make in this recipe.

Pecans—> walnuts

All Purpose Flour—> white whole wheat Flour

Yellow Pears —> Any type of pear or apples

How to Make a Galette

There are so many similarities between a pie and a galette. They both use very similar dough (in this case, the same dough) and they have a delicious fruit filling. A galette is much easier to make and there really is no fuss to go along with the method.

Roll out Crust + refrigerate

You want to make sure your galette crust stays flat and firm. To make sure this happens you are going to roll out the galette with a rolling pin dough into a 10-inch circle that is about 1/2 inch thick.

Cover the pie crust with plastic wrap and place it i and refrigerate it for 15 minutes.

Process Pecan mixture

One of the most important parts of this recipe is mixing up this pecan crumble. This pecan mixture is going to ensure that you don’t end up with a soggy galette.

While pie crust is firming up, place the pecans, flour, ¼ teaspoon cardamom, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg into a food processor. Process the ingredients on low until the ingredients are processed together and the pecans turn into a pecan flour. Slowly drizzle honey into the food processor.   Set aside for a moment.

What does the pecan mixture do?

The pecan mixture is placed on the galette dough before adding the pears. It soaks up any excess liquid that comes from the pears. It also offers a delicious pecan flavor and crunch to the galette.

Prep the Pears

No matter what fruit you are using to make a galette, you want to make sure the fruit you are using is thinly sliced to decrease the bake time. We swear by our kitchen mandoline. It gives you a thin and consistent slice every time.

To get your pears ready for the galette, thinly slice the pear with a mandoline or a sharp knife and add them to a large mixing bowl. Add the lemon juice to the pears and toss. This will prevent the pears from turning brown.

Then, sprinkle 1/4 teaspoon of the cardamom, cinnamon, and nutmeg over the pears and toss them together. Set them aside for later.

Create A Pear Master Piece

Remove your pie crust from the refrigerator and place it on a parchment paper lined baking sheet. It it is time to assemble a delicious and gorgeous pear galette.

Sprinkle the pecan mixture over the pie crust Be sure to leave about 2 inches of bare dough around the edges. You will be folding it in.

Now is the time to get creative. You are going to make the pear filling for this galette. You can make any kind of design that you would like with the pears. Some people like to do a patch work pattern and some people like to do a spiral pattern. Have fun with it!

Once you have placed the pear slices in perfect position, fold the edge of the galette dough over the fruit to create a crust.

Finally, melt butter and honey together over the stove and brush the honey butter over the galette for a buttery and sweet glaze.

Do you like a little extra crunch? Sprinkle 2-3 teaspoons of turbinado sugar (or another kind of coarse sugar) over the honey butter glaze before baking the galette for a little extra crunch.

Bake the galette

Place the galette in the oven and bake for 15 minutes. Turn the oven 180º and then bake for an additional 15 minutes or until the crust turns golden brown

Drizzle with honey

Remove the galette from the oven and drizzle with honey and garnish with fresh thyme. Enjoy the galette on its own, with a soup of vanilla ice cream, or with whipped cream.

What other filling can I use for a galette?

We love all different types of galette flavors. You can make sweet or savory galettes. You can add vegetables, cheese, or different types of fruit. Below are a few other great galette filling options.

Can a galette be made in advance?

Yes, you can most definitely make galettes in advance. Prepare the galette and store it in the refrigerator before serving. You can refrigerate it for 2-3 days before reheating it.

To reheat the galette, heat the oven to 350ºF and bake the galette for 15 minutes or until warm.

Can you freeze a galette?

Yes, you can freeze a galette. Bake the galette and then let it cool completely before wrapping it in tin foil or in a freezer-safe container. Freeze it for up to 3 months.

To reheat a frozen galette from frozen heat the oven to 350ºF and bake the galette for 25-30 minutes or until warm.

Ingredients 

  • 1 pie crust rolled into a 10-inch round, we used this Pillsbury pie crust
  • 1/4 cup raw pecans
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cardamom, separated
  • 1 teaspoon ground cinnamon, separated
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons honey, + more for topping
  • 2 yellow pears, thinly sliced with a mandoline
  • 1 tablespoon fresh lemon juice

Honey Glaze

  • 2 tablespoons honey
  • 2 tablespoons butter

Instructions 

  • Preheat the oven to 375ºF and line a baking sheet with parchment paper. 
  • Roll out your pie crust into a 10-inch circle that is about 1/8 -inch thick and place it on a lined parchment-large plate. Place the pie crust in the fridge for 15 minutes to firm up. 
  • While pie crust is firming up, place the pecans, flour, ¼ teaspoon cardamom, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg into a food processor. Process the ingredients on low until the ingredients are processed together and the pecans turn into a pecan flour. 
  • Continue to process the mixture while drizzling 2 teaspoons of honey into the food processor. Only process with the honey until combined, do not let the mixture turn into a dough. Set the pecan mixture aside. 
  • Place the thin pear slices into a large bowl and toss the pears with 1 tablespoon of lemon juice. Sprinkle ¼ teaspoon of cardamom and ½ teaspoon of cinnamon over the pears and toss the ingredients together. 
  • Remove the pie crust from the fridge and pour the pecan mixture into the middle of the pie crust. Spread the pecan mixture over the pie crust, but leave 1.5-inches of pie crust clean at the edges of pie crust. 
  • Next, begin layering the pear on top of the pecan mixture. Start in the middle of the pie crust and overlap the pears in layers moving towards the edge of the pie crust. Only place the pears on the pecan mixture. Stop when you reach the clean edges of the pie crust. 
  • Fold the pie crust over the pears to create a beautiful crust. Set aside. 
  • Heat 2 tablespoons of honey and 2 tablespoons of butter together over medium heat. 
  • When the honey and the butter is melted remove it from the heat. 
  • Brush the butter mixture over the pie crust and the pears with a pastry brush. 
  • Place the galette into the oven and bake for 15 minutes. Turn the pan around in the oven and bake for an additional 15 minutes or until the pie crust begins to brown.   
  • Remove the galette from the oven and let it rest for 10 minutes. Drizzle with honey and serve. 

Tips & Notes

  • You can use a homemade pie crust or a store bought pie crust. Just be sure it’s rolled out to about a 10-inch circle that is about 1/8-inch thick. 
  • We used Bartlett pears, but any pear will do. 
  • Don’t skip the lemon juice. It adds brightness to the pears and helps keep your pears from turning brown. 
  • The pecan mixture is used for both flavor and to be sure the pie crust doesn’t turn out soggy.

Very appetizing recipe! You are well done that you noted that you can cook the pie not only with pears but also with apples, or make pizza.
