what you need:
olive oil yellow onion chopped carrots russet potato Bella mushrooms minced garlic chicken broth uncooked barley chicken breast chopped fresh kale
Add onion & salt to a heated stock pot. Sauté for 3-4 minutes. Add the veggies, salt, and pepper to the pot. Toss together & cook for 3-4 minutes. Add garlic.
Add chicken broth, lemon juice, & barley. Add chicken & thyme sprigs. Bring the soup to a boil over high heat, stir, Turn the heat to low. Cover & let it simmer for 25-30 min.
Remove the chicken from the pot and carefully shred the chicken and transfer it back into the pot. Add the chopped kale and mix to combine.
Let the soup simmer for another 10 minutes to allow the kale to soften. Remove the thyme sprigs from the pot and serve with fresh lemon slices.
