Easy Peasy Parfaits

This parfait layers a healthy peanut butter chocolate mouse with fresh fruit and a few dark chocolate chips. So, what do you need for the mousse? GET THIS- only three ingredients:

  • Vanilla Greek Yogurt
  • Cocoa Powder
  • Peanut Butter

You wouldn’t guess by looking at the above ingredients…but this stuff tastes EXACTLY like traditional peanut butter chocolate mousse that typically packs quite a few more ingredients, and requires WAY more prep time. The consistency is right on, and the flavor is out of this world.

High Protein Dessert

We’re big fans of the fact that this peanut butter chocolate mousse is a high protein dessert! Our motto: when in doubt, choose a snack or dessert that’s high in protein. Can’t go wrong with Greek yogurt! Or all-natural peanut butter!

And if you want even more protein, you can sub the cocoa powder for equal parts chocolate protein powder. GENIUS.

Nut Butter Alternatives

We love love love the creaminess that peanut butter adds to this recipe,  but if you have another nut butter of choice, feel free to sub in equal parts of that! Including:

  • Cashew butter
  • Almond butter
  • Hazelnut butter

Pro Tip: if you’re not using a DRIPPY nut butter, you may need to play with the ratio of Greek yogurt (liquid) to cocoa powder (dry ingredient) to get your desired consistency.

Topping Ideas

Top this delicious peanut butter chocolate mousse with any (or all?!) of the following toppings to round out this oh so very fun dessert:

  • Sliced strawberries
  • Sliced bananas

Ingredients 

  • 1/3 cup vanilla Greek yogurt
  • 1 tablespoon creamy peanut butter
  • 1.5 tablespoons cocoa powder
  • For serving: strawberries, banana, mini chocolate chips

Instructions 

  • Place Greek yogurt, peanut butter, and cocoa powder in a small bowl. Mix until combined. Layer with fresh fruit and mini chocolate chips.

Awesome, rich and satisfying! I used plain Greek yogurt, but added Truvia for sweetener, a splash of vanilla and toasted almonds. Try freezing it for 45 minutes for a nice frozen treat. Delicious!

Looks delicious! only question is how can this only have 113 calories since the yogurt alone has 100? I know there are more than 13 calories in one Tablespoon of peanut butter. Can you update with new nutrition data?

I love these kinds of easy recipes! My breakfast routine has gotten pretty sad, like peanut butter on toast every day sad. Definitely upping my game and making this next week!

Random question – do you do your videos on your DSLR with an overhead tripod or did you get a video camera setup? The ones I’ve seen on your site look so sharp and absolutely great! Nice work!
