When we posted our Starbucks’ Brown Sugar Shaken Espresso recipe, it went completely viral and you folks fell in love immediately. We knew we had to create a breakfast recipe inspired by this delicious drink and here it is.
This overnight oats recipe combines the flavors of brown sugar and espresso to give you one delicious breakfast that’s packed with whole grains and also gives you a nice wake-up call from a shot of espresso!

Brown Sugar Shaken Espresso
This Copycat Starbucksu003cstrongu003e Iced Brown Sugar Oat Milk Shaken Espressou003c/strongu003e is so simple to make in your own kitchen and is that morning kick you didn’t know you needed!
What You Need – Simple Ingredients
- Rolled Oats – feel free to use either rolled oats or quick-cooking. We prefer the texture of rolled oats, though.
- Brown Sugar – brown sugar is used as the sweetener.
- Chia Seeds – chia seeds are a classic overnight oats ingredient. They add volume and healthy fats.
- Almond Milk – almond milk is used as the main liquid in this recipe.
- Espresso – we are using an espresso concentrate (Chameleon is our favorite!), but you’re more than welcome to use freshly brewed espresso. cold brew concentrate, or strong coffee.
- Almond Milk – we use unsweetened almond milk in this recipe, but any kind of milk works.

Can I use quick-cooking oats instead?
Quick-cooking oats definitely work for this recipe. We don’t recommend using steel-cut oats, however.
Can I use a different kind of milk?
Any kind of milk works for this recipe.
Sweetener swaps
Looking to use a different sweetener? Go for it! Try swapping any of the following 1:1:
- maple syrup
- honey
- white sugar
Super Simple Instructions for Coffee Overnight Oats
- Dry: place ingredients into a medium container and mix.
- Wet: add wet ingredients into the container.
- Mix: mix to combine.
- Soak: place the lid on top of the container and transfer it into the frigdge to soak for at least 2 hours or overnight (preferred!).
- Eat: eat overnight oats cold with your favorite toppings on top.
Can I double this recipe?
This recipe can easily be doubled or tripled for meal-prep purposes. Use the ingredient multiplier in our recipe card.
Should I eat this hot or cold?
Overnight oats are meant to be eaten cold, but lots of people like to warm them up. Feel free to eat them cold or warm them in the microwave for 60-90 seconds.

Storage Tips
Meal-Prep: We like to store single servings of this recipe in jars or meal prep containers for an easy grab-and-go breakfast. However, you can also make it in one large container and store it like that.
How long does it last? Brown sugar shaken espresso overnight oats will last up to 5 days in the fridge.
Brown Sugar Shaken Espresso Overnight Oats
Ingredients
- 2 tablespoons brown sugar
- 1 cup rolled oats
- 1 tablespoon chia seeds
- Pinch of salt
- ¼ cup cold brew concentrate, or regular espresso
- 1 cup unsweetened plain almond milk*
Instructions
- Add the brown sugar, rolled oats, chia seeds, and salt to a meal prep container and stir the ingredients together.
- Pour the espresso and almond milk over the oats and mix until combined.
- Cover and place the oats into the refrigerator for at least 2 hours or up to overnight.
- Option to add more almond milk before serving or eat as-is.
Tips & Notes
- Add a few more tablespoons of almond milk to the oats if you like more of a soupy overnight oat.
- We used chameleon espresso concentrate but feel free to use freshly brewed espresso, cold brew concentrate, or strong coffee.

I am a huge lover of overnight oats and baked oats, anything but regular oats. This recipe has potential, especially for a delicious breakfast. The only downside was I found it a little too runny for my taste, although the recipe is supposed to imitate iced coffee so, I get it. The flavor is delicious and definitely coffee-forward which I was delighted by, and coffee-lovers will love this recipe too. I’ll probably pull back on the liquid and maybe add a little more chia seeds.
Was so excited to try this as it’s my favourite drink but it was horrible. It was way more runny than I was expecting and it was very slimy (you can see the slime hanging off the spoon in my photo!). It tasted so bad I threw it away after one mouthful.
I think I’m missing something. A cup of rolled oats is like 300 calories, how is this recipe only 170 calories? Am I suppose to split it?
I initially thought the same but if you look back it’s for two servings so yes split it.

These overnight oats will last up to 5 days in the fridge when kept in an airtight container. Hope this helps!

I made this recipe last night and ate it for breakfast this morning… it was so good! I’ve recently loved trying new overnight oats recipes and this one is a favorite. I love the hint of espresso. If I wanted to make the coffee flavor stronger could I add an extra shot of espresso, or would that mess up the consistency too much? Thank you!
So happy to hear it! You will probably need to add more oats to compensate for the extra liquid — start with an additional tablespoon, and go from there!

I didn’t add chia seeds and I used rolled oats. I calculated 232 calories per serving.
