Get ready for what is sure to be your new favorite way to enjoy those Thanksgiving leftovers! We love that this leftover turkey quesadilla packs all those amazing Thanksgiving flavors in an easy to dip quesadilla.

Ingredients You Need
You only need 6 ingredients to make this leftover Thanksgiving turkey quesadilla. It’s time to round up:
- Leftover turkey (obviously)
- Cranberry sauce
- Brie cheese
- Fresh thyme
- A tortilla
- Gravy (for dipping!)

How to Make a Leftover Turkey Quesadilla

Preheat
Heat a large skillet over medium heat, and add olive oil.
Melt cheese
When the olive oil is fragrant, add 1 tortilla to the skillet and spread the brie cheese out over the tortilla. Then, cover the skillet and allow the cheese to melt.
Add cranberry sauce
Uncover the skillet and scoop the cranberry sauce over the brie cheese, making sure to spread it out evenly.
Add turkey & fresh thyme
Top the cranberry sauce with the shredded turkey and sprinkle with fresh thyme.
2nd tortilla time
Place the other tortilla on top of the tortilla and carefully flip the quesadilla over with a spatula. Then cover the skillet and brown the second tortilla.
Cut, dip & enjoy
Remove the quesadilla when the cheese is melted and the tortilla has browned. Cut into 4 wedges and serve with leftover gravy as a dipping sauce. Enjoy!

- Leftover turkey –> Shredded chicken: Don’t have any leftover turkey from your Thanksgiving meal? Use any shredded chicken or rotisserie chicken.
- Brie cheese –> Any meltable cheese: Fontina, Swiss, gouda or a triple creme cheese would be amazingly delicious substitutions.
- Cranberry sauce –> Raspberry or strawberry preserves: Was your cranberry sauce all gobbled up? Use a berry preserve or jam as an easy swap.



Leftover Thanksgiving Turkey Quesadilla
Ingredients
- 1 tablespoon olive oil
- 2 10-inch tortillas
- 4 oz. brie cheese brine removed and cut into thin slices
- ¼ cup cranberry sauce
- ½ cup leftover shredded turkey
- 2 teaspoons fresh thyme
- ¼ cup leftover gravy for dipping
Instructions
- Heat a large skillet over medium heat. Add olive oil.
- When the olive oil is fragrant, add 1 tortilla to the skillet and spread the brie cheese out over the tortilla. Cover the skillet for 3 minutes to allow the cheese to melt.
- Uncover the skillet and scoop the cranberry sauce over the brie cheese. Spread it out evenly.
- Top the cranberry sauce with the shredded turkey and sprinkle with fresh thyme.
- Place the other tortilla on top of the tortilla and carefully flip the quesadilla over with a spatula.
- Cover the skillet and brown the second tortilla for another 3 minutes.
- Remove the quesadilla when the cheese is melted and the tortilla has browned.
- Cut into 4 wedges and serve with leftover gravy.
