What’s In an Arugula Breakfast Sandwich?

  • Arugula: A great way to get in your greens in the morning! Plus, arugula adds a peppery taste, pairing perfectly with the bacon and caramelized onions. 
  • English Muffin: We used a whole grain English muffin for a little extra fiber! You could use plain if you like. 
  • Egg: We added an egg to ours for a boost of protein, but you could leave this out if you’re not a fan of eggs. Check out our recipe for making the perfect fried egg
  • Bacon Slices: We added one piece of bacon to our breakfast sandwiches for a little extra protein and flavor! Make things easier for yourself by making bacon in the oven, air fryer bacon, or microwave bacon for a whole batch of sandwiches!
  • Caramelized Onions: Add SO much flavor to these sandwiches. Feel free to use any type of onion you like.

Breakfast Sandwich Variations

  • Add cheese: Add a piece of cheddar cheese to your sandwich for a little extra protein and flavor! If you want to get real fancy, goat cheese would be *chef’s kiss* paired with arugula and bacon. 
  • Use bread: If you’re not a fan of English muffins, use regular bread instead. Ciabatta bread would be super good, too!
  • Swap the meat: You can also swap the meat out for a different kind, such as breakfast sausage, turkey bacon, or chorizo!

Make a huge batch of these breakfast sandwiches and store them in the freezer so you can have them on deck!

How to Store Leftovers

If you don’t plan on eating your breakfast sandwich right away, wrap each one with wax paper or parchment paper and place it into individual bags. However, we recommend only putting the arugula on the sandwich right before you plan on eating it as freezing it can ruin the texture.

​How do I reheat frozen Breakfast Sandwiches?

We recommend defrosting the sandwiches in the microwave for 30 seconds for refrigerated and 1 minute for frozen. Then, pop it in a toaster oven for a few minutes until warm! Add your arugula after your sandwich is warm to prevent it from becoming soggy.

​Take the top off the sandwich and toast with the sandwich open. This helps everything crisp up nicely.

Ingredients 

  • 1 cup arugula
  • 1/2 tablespoon of balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 whole grain English muffin
  • 1 egg
  • 1 slice of cheddar cheese
  • 1 piece of bacon, cooked
  • 2 tablespoons caramelized onions

Instructions 

  • First, toss arugula with 1/2 tablespoon balsamic vinegar, 1/2 tablespoon olive oil, and salt and pepper to taste. Set aside.
  • Cut an English muffin in half and toast. Set aside.
  • Next, heat a medium skillet over medium heat. Add olive oil.
  • When olive oil is fragrant, crack an egg into pan and cover. Let cook for 3-6 minutes depending on how you like your eggs cooked.
  • Assemble your sandwich by laying a slice of cheddar cheese on one half of the english muffin, followed by a piece of bacon, caramelized onions, and then arugula. Carefully place the fried egg on top of the arugula.  Top with the other half of your english muffin and enjoy!
