We first posted this bacon wrapped Brussels sprouts recipe back in 2018 and we’ve since revamped it to make them even easier to prepare + we added an aioli dipping sauce. Made with just 2 ingredients (it’s all in the name), this is our go-to appetizer for pretty much any holiday get-together.

The rundown: simply slice 10 pieces of thick-cut bacon in half and then wrap each brussels sprout with the bacon. Lay them seam-side down on a tin foil-lined baking sheet and bake until crispy!

What Do You Need for Bacon Wrapped Brussels Sprouts?

  • Tin foil-lined baking sheet: tin foil is huge for clean up. We’ve made these without tin foil before and that also works, but it’s a greasy mess at the end!
  • Thick-cut bacon: we tested this recipe with thick and medium-cut bacon and thick is much preferred because you need that extra baking time to get the brussels sprouts perfectly cooked.
  • Small/medium Brussels sprouts: if you plan to use large brussels sprouts, you can cut them in half.

How do you know when bacon is cooked?

The safest way to know if your bacon is cooked is to use a meat thermometer. It should read 145ºF (USDA). It should be darker in color and crispy to touch.

Brussels Sprouts Wrapped in Bacon Variations

Use a flavored bacon: try using an applewood smoked bacon or any flavor of bacon.

Add seasonings/flavors: sprinkle on some seasonings such as everything bagel seasoning or old bay seasonings. We also love adding a drizzle of maple syrup to the bacon for a sweet/savory approach.

Give it a maple touch: add a drizzle of maple syrup to the tops of hte bacon before bacon. This is my all time favorite way to serve this dish!

Can you make bacon wrapped Brussels sprouts in the air fryer?

If you love your air fryer feel free to cook these up at 400ºF. Start with 15 minutes and continue air frying in 5-minute increments until cooked.

How long do bacon wrapped Brussels sprouts last in the fridge?

If you have leftovers, transfer them into an airtight container and store in the fridge for up to 3 days.

To reheat: simply microwave on high for 60 seconds.

Ingredients 

Quick Aioli

  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper

Bacon-Wrapped Brussels Sprouts

  • 20 small/medium Brussels sprouts
  • 10 strips thick-cut bacon, halved

Instructions 

  • Preheat the oven to 400℉ and line a baking sheet with tin foil.
  • Make the aioli: To make the aioli, add all of the ingredients to a small bowl and stir to combine. Set aside.
    A bowl of yogurt with a spoon in it.
  • Assemble the bacon-wrapped brussels spouts: slice 10 pieces of thick-cut bacon in half so that you have 20 pieces total. Then, lay a piece of bacon on the baking sheet so that it is flat. Place a brussels sprout at the top of the bacon piece and roll it up. Make sure it is laying seam-side down on the baking sheet. Repeat.

  • Spread the bacon wrapped brussels sprouts out so that they are not touching and then bake for 30-40 minutes depending on how crispy you like your bacon.

  • Serve immediately with the aioli.

Tips & Notes

  • Save time and make the aioli the day before.
  • Add 2 tablespoons of grated parmesan to the aioli for an extra flavor boost.
  • Nutrition information does not include the aioli.

These were awesome. My most favorite part of my Thanksgiving dinner this year. But I would suggest cutting the bacon in half because using the full length strip was too much bacon so that the inner part of the bacon didn’t get crispy. I also think the half a strip makes the sprouts get cooked better. But I am so in love with these.

Wegman’s has bacon that is low fat, low sodium. 60 calories for 3 slices!
