Easy Variations & Substitutions
Boursin cheese: We used garlic and chive Boursin cheese, but any flavor will work.
Using another variety of cheese: You can replace the Boursin with goat cheese logs if necessary.
Cherry tomatoes: We love the flavor and size of cherry tomatoes, but any variety of tomato will work as long as they’re cut to a similar size as cherry tomatoes for roasting.
Onion: White onion adds a subtle flavor that we love, but yellow onion or shallot will also work.
Amp up the spice: Double the red pepper flakes to give this dip a little extra heat.

Roasted Garlic Baked Boursin Dip
Ingredients
- ¼ cup olive oil
- 2 tablespoons tomato paste
- ½ medium white onion, diced
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- 10 oz. cherry tomatoes
- 1 head garlic, ~10 cloves garlic

For serving
- Olive oil
- Red pepper flakes
- Minced fresh chives
Instructions
- Preheat the oven to 400ºF.
- Add the olive oil and tomato paste into an 8×8-inch baking dish and whisk the ingredients together. Trim the tip of the head of garlic so the cloves remain intact. Add the onion, salt, pepper, tomatoes, and garlic to the dish and toss all of the ingredients together until coated.
- Nestle two Boursin pucks into the tomatoes and cover. Bake for 25-30 minutes or until the cheese browns and the tomatoes have burst.
- Remove the dip and carefully squeeze the garlic cloves out of the head. Use a fork to mash the garlic cloves and tomatoes. Then, stir everything together.
- Drizzle the top with a little olive oil and season with fresh chives and red pepper flakes. Serve with crostini, crackers, or vegetables.
Tips & Notes
- We used garlic and chive Boursin cheese, but any flavor will work.

As expected, this dip was the MVA (most valuable appetizer) of our Super Bowl party. From kick off to the day after arm chair quarterbacking, everyone kept asking for the recipe. I served this with the regular starting line up of crostini and chips but this dip is also delicious with special teams, carrots and celery. I followed the recipe play by play and wouldnโt change a thing. Give this dip the Lombardi trophy!
