The Secret to Fluffy Oatmeal

You’re all I ever wanted. You’re all I ever needed. Yeah. That’s what I sang the entire time I ate this oatmeal. This recipe reminds me of college when I first fell in love with oatmeal for breakfast. Banana stovetop oatmeal was my go-to because I knew it would keep me full all day and I could get so much volume out of one serving (thank you chia seeds and extra almond milk). Do you know what the secret to extra fluffy stovetop oatmeal is? Double whipping it with extra almond milk. Once you think it’s done cooking, add a little bit more milk and then keep on stirring! What you Need

This recipe calls for rolled oats as opposed to any other kind of oats (steel cut, quick cooking, etc.). Feel free to double or triple this recipe. You may need a little bit extra liquid, but other than that it should be pretty true to the recipe. Here’s what else you’ll need:
  • Rolled Oats
  • Almond milk
  • Maple syrup
  • Banana
  • Chia seeds
  • Cinnamon
  • Vanilla extract
We topped ours with some walnuts, freshly sliced banana, and some banana bread chunks. YAS PLEASE. If you’re a nut butter lover, we highly recommend almond butter for this.

Why Stovetop Oats?

Why make stovetop oats when you can just make them in the microwave? I know it takes longer to make, but once you make oats on the stove, you’re never going to use the microwave again! Ingredients 

Instructions 

  • Place all ingredients (minus 1/2 cup almond milk) into a medium sauce pan. Turn to high medium/high heat, mix, and bring to a boil.
  • Turn heat down to low/medium and simmer for about 5 minutes, stirring consistently until oatmeal thickens.
  • Add 1/2 cup more almond milk and mix again. Let simmer for 1-2 more minutes. We call this double whipped.
  • Top with walnuts, bananas, and chunks of banana bread.

*start with 2 cups and add more by the 1/4 cup.

I’ve never really been a huge oatmeal fan, but I’m sick of the usual morning breakfasts so I thought I’d branch out. I’m so happy I found this recipe. I have 2 boys- a 3 year old and a 9 month old- and I don’t have to fight them at ALL to eat this. I did add 2 bananas instead of just 1 because we love bananas in this house LOL but it’s a GREAT recipe. I’ll be trying more of your recipes for sure! Great job!

Made this for breakfast this morning. My two year old called it Ice Cream Oatmeal and my husband (who never eats breakfast or Oatmeal) had a huge bowl and said it was delicious. I didn’t add any of the toppings and will definitely be making this again.

I’m amazed by the fluff factor that tho oatmeal brings! It’s probably so filling and tastes exactly like banana bread!
